Cauliflower Salad

When you’re low-carbing, potato salad and macaroni salad are two of those foods that you really like, but maybe not enough to make them your weekend indulgence. So here’s something you can have during the week alongside your burgers and hot dogs.

Roast Beef Hash
I love corned beef hash. But it’s full of potatoes which limits it to a weekend-only food, and the canned stuff is usually loaded with other stuff I’m not interested in.
But it turns out small white beans work perfectly in place of the potatoes. So now I’ve got a great way to use up leftover roast beef. Winning!

How to make Omelet Pie
You like omelets but don’t have time to cook each morning. So make one omelet pie and freeze slices of it. A minute to nuke it and you’ve got breakfast. (Minute-and-a-half if you’ve got a low-powered microwave like mine.)

Make guacamole for Cinco de Mayo
I didn’t used to think I liked guacamole. Then I had Lori’s and I realized I don’t like bad guacamole. And of course most people think they shouldn’t eat guac or avocados because of all the fat, when the truth is the carbs in chips are the real problem.
You can watch Lori and I make this on video if you’re unsure about the directions on the recipe card.

A turkey breast, though … that you can do on the grill.

Brussels Sprouts
When I was a child, I spake as a child, I understood as a child, I thought as a child: but when I became a man, I put away childish things.
And started eating Brussels sprouts. What the hell was I waiting for, these things are good!
But yeah, you might want to go with something else if you’re going to be in a small room with anyone else after you eat them. Cabbage farts linger …

Shrimp Scampi
Don’t listen to anyone who tells you there’s a “right” recipe for shrimp scampi. As long as it starts with butter and garlic — and shrimp, of course — it’s pretty hard to go wrong.
Actually … that’s true of just about any recipe.

Fried Green Beans (With Bacon!)
What do we say about bacon, kids? All together now:
Everything’s better with bacon!
That’s right, even green beans are good if you add some bacon in there. Bacon fat, actually. You do store your rendered bacon fat, don’t you?

Rotisserie Pork Loin
Start with a good cut of meat and don’t screw it up. And the rotisserie makes that easy.
