BLT on fried cheese

There’s a farmers market down the street from my office once a week, and the tomatoes are coming in. Which means it’s BLT season.[1] Since I don’t eat toast, my first thought was to do it as a lettuce wrap. Then I had a revelation …

Why don’t I put it on a cheese crust like I made for my crustless pizza? So I did.

And of course the fresh tomatoes.

I could eat this every day.


[1] Back when vegetables were available more seasonally, and meat had to be stored in frozen warehouses, the Chicago Mercantile Exchange was created to trade in agricultural futures. The #1 product was pork, and the majority of pork was delivered for consumption when tomatoes were in season. So the Chicago Mercantile Exchange was literally founded on the BLT.
